Structured vs Unstructured
Discrete fields you can query vs free-text or images that require parsing.
Structured data lives in well-defined fields: birth date, ICD-10 code, medication strength. Unstructured data is free-text notes, scanned PDFs, faxes. Most EHR exports include both — a structured CSV/JSON plus a stack of PDFs. Migrating unstructured data well usually means OCR or NLP.
